Quick Fajitas
Fajitas are so yummy that you would think you'd be slaving over a hot stove all day to make them... but you'd be wrong! Here is a quick, easy fajita recipe that packs a nutritional punch too.
1 T olive oil 1 pound organic or grass fed steak, cut into strips 1/2 tsp. sea salt 1/4 tsp. freshly ground black pepper 1 large red or yellow onion, thinly sliced 1 large red or yellow bell pepper, thinly sliced 12 whole grain flour tortillas
Sour cream, avocados, salsa and cheese for topping
Heat oil in a large skillet over medium heat. Sprinkle salt and papper on steak and add to skillet, cooking for 2 to 3 minutes. Add the onion and cook for a couple minutes, then add the bell pepper. Cook until veggies are as soft as you like them. Transfer to a serving plate. Warm the tortillas in an ungreased cast iron or stainless steel skillet or in a warm oven. Serve with toppings.
Excellent when served with fried plaintains and Spanish rice.
