Skillet Country Fried Steak


Ingredients:

4 cube steaks, pounded for tenderization
3 large organic or free range eggs, beaten
1 ½ cup flour
2 ½ teaspoon pepper
1 cup lard
1 cup organic milk

Gravy
2 tablespoons steak fat
2 tablespoons flour
Milk

Directions:

Heat lard in a large cast iron skillet. Mix flour and pepper. Crack and beat eggs with 1 cup milk and dip steaks into egg blend and then flour mixture. Repeat if desired. Fry steaks until done. For gravy, take 2 tablespoons of grease from the skillet and mix with flour and milk in a small saucepan over low heat. Add milk slowly until right consistency is reached. Top with freshly ground pepper.
